{Healthy} Gingerbread Waffles

I almost can't even begin to tell you how yummy these waffles are, and guess what?! They're HEALTHY! With so much flavour from the warm gingerbread spices, the whole-wheat flour goes completely undetected. I replaced canola oil with coconut oil for even more 'healthiness', and add only a touch of sugar... I do THAT because as soon as my back is turned, my sweethearts proceed to drown their waffles in maple syrup anyway. I actually read somewhere that you can make waffle batter and keep it in the fridge to use throughout the week. Don't do it. I tried. It's really awful actually, but that's why I'm here – to find out what works. Instead, we make a big batch on the weekend, cook all the batter and freeze the extra waffles to reheat in the toaster during the week. That works like a charm. Do that. 

Makes about 10 waffles {in my small waffle iron}


2 eggs

1 3/4 cups milk (can use almond milk or cow's milk - I haven't tested any others)

1/2 cup melted – but not hot – coconut oil (can also use canola or any light flavoured oil if you prefer)

1 tsp vanilla

1 tbsp brown sugar

pinch of fine sea salt

2 cups whole-wheat flour

4 tsp baking powder

1 tsp ground cinnamon

3/4 tsp ground ginger

1/8 tsp ground clove

1/8 tsp ground nutmeg

2 tbsp fancy molasses

maple syrup & freshly whipped cream with a touch of vanilla


Preheat your waffle iron as well as set your oven to 200ºF to keep the cooked waffles warm until ready to serve.

In a large bowl, beat the eggs with a whisk until fluffy and lighter in colour. Add the remaining ingredients (except the maple syrup and whipped cream - those are for later ;). Stir with a whisk until well combined and there are no large lumps. Let the batter rest for 5 minutes.

Spoon the batter into your waffle iron and cook as directed. 

Viola! You're house smells amazing right now and you probably have a line up for waffles in your kitchen. 


Grab the pure maple syrup and don't forget the whipped cream – which you can justify because the waffles are so healthy. Well, that's what I do anyway.
